Here is a likely incomplete list of trains that I've taken at some point.

Notes for self:
- Headings are for is (train category, continent[, country]), then each
operator is listed with a sublist of routes/services where relevant.
- Generally a country gets its own section if there are at least two
entries that would go in it, and at least one item in that continent
not for that country.
- Cross-border trains are generally included twice, once for each
country, assuming both countries have their own dedicated sections.
If not, they're either listed in the country that has their own
section, or simply on the continent level (e.g. Allegro) especially
if it's a single service from an operator that's not otherwise
included.
- Jointly operated services are mentioned under operators relevant in
that country — for example a Copenhagen–Hamburg EuroCity operated by
DB and DSB would be mentioned under DB in Germany and DSB in Denmark.
- Em-dashes are used instead of the plain hyphen symbol. Here is one
for copy-pasting:
